After an exhausting nine hour workday it’s fiiinally time to go home and get on the couch! Who doesn’t do that: During a working week cooking is far away from being a priority in your day and big cooking actions are very rare, there is just not enough energy left to spend the evening in the kitchen preparing a fresh and healthy meal. Pizza, take-out food or even just a bag of crisps has to be enough sometimes.
But we are all very lucky, that the gorgeous food blogger Valentina (Valentinaballerina) is going to share some tips with us today on how to create a very easy, but still very healthy and delicious dinner, that doesn’t take too long to cook. Perfectly light for summertime and again a perfect proof, that vegan meals can be sooo delicious. Have fun trying the recipe, Kaptens!
- 125 g Getreidemix (alternativ Couscous oder Quinoa)
- ½ Avocado
- eine Handvoll Rucola Salat
- 125 g Champignons
- 1 Rispentomate
- ½ Zucchini
- Schwarzkümmel, Kräutersalz, Pfeffer, frische Petersilie, weißer Balsamico
- 20 g Hummus
First, you have to wash your vegetables and cut the mushroom into slices. Cit the tomatoe and the courgette into squares carefully. After that just cook the couscous or quinoa according to the package instructions In a big pan roast the courgette and when they start to get brown add the mushrooms in and let it roast for two more minutes. Add salt and pepper.
Mix the tomatoe with the parsley, salt, pepper and some of the white balsamic vinegar Cut the avocado into fine stripes and scoop it out of it's skin The last step is to put the rucola into a large bowl, and add all the other ingrediets. On top you can put some hummous and the black cumin and some flowers for deco, if you fancy.

No time, an empty fridge: What is your go-to snack?
I either go for some super fruit or couscous or buy myself some granary loaf with hummus, lunch meat or cheese. An apple is always a great choice aswell.
Do you have any principles regarding nutrition that you want to share?
I love to eat healthy and balanced and also work out a lot. Nevertheless, one should be aware that one shall not eat "too healthy". If you deny your body essential macronutrients it is not healthy anymore.
